Apple Cinnamon Baked Oatmeal Muffins

We understand that many of our members are constantly busy. To help them make breakfast a little less chaotic, Chef Maggie wanted to add a quick and nutritious item to the menu.

The idea for Apple Cinnamon Baked Oatmeal Muffins came from her time cooking at a resort in Hawaii, when she would make apple oatmeal squares for the guests every morning.

Apple Cinnamon Baked Oatmeal Cookies

SERVES  6 MUFFINS
PREP TIME  15 MINS
COOK TIME  20 MINS

 

 
Ingredients
 
Apple, Granny Smith
1 cup
Sunflower Oil 1/2 tsp
GF Rolled Oats
3 cups
Light Brown Sugar
1/2 cup
Baking Powder
1 tsp
Salt
1/2 tsp
Ground Cinnamon
1 tsp
Eggs
2 each
Whole Milk
1 cup
Applesauce
1/4 cup
Vanilla Extract
1/2 tsp
Unsalted Butter - melted
3 tbsp
   

Directions

 
1. Preheat oven to 350˚  F.
 
2. Dice apples and heat sunflower oil in small pan. Add apples and cook over medium/high heat for about 3 minutes or until slightly tender. Set aside.
 
3. In large bowl combine the oats, sugar, baking powder, salt, and cinnamon. 
 
4. In another bowl mix together the eggs, milk, applesauce, vanilla, and butter.
 
5. Stir wet ingredients into the dry ingredients, then fold in the apples.
 
6. Scoop mixture into paper muffin liners and fill to top with mixture. For added sweetness and texture, lightly top with sanding sugar.
 
7. Bake in oven for 10 minutes then turn pan and bake for another 8 minutes.
 
8. Let cool and enjoy!
