Chocolate Coconut Granola Bars

Our batch is made with toasted coconut, cashews, chocolate chips, and topped with flaky sea salt - these bars are forgiving in the way you can add, remove, or substitute any of those mix ins if you're looking for something a little different.

Chocolate Coconut Granola Bars

SERVES  12 SERVINGS

Ingredients
Creamy Peanut Butter 1/2 cup
Honey 1/3 cup
Canola Oil 2 tbsp
Eggs 1 each
Vanilla Extract 1 tsp
Old Fashioned Oats 2 cups
Rice Krispies Cereal 1 1/2 cups
Light Brown Sugar 1/2 cup
Kosher Salt 3/4 tsp
Coconut Flakes 1/4 cup
Semi-Sweet Chocolate Chips 1/4 cup
Cashews 1/4 cup
Flaky Sea Salt 2 tsp

 

Directions
  1. 1. Preheat oven to 350°. In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended. Combine the oats, rice krispies, brown sugar and salt; add to the peanut butter mixture and mix well. Stir in chocolate chips, coconut, and cashews. (Batter will be sticky.)

  3. 2. Press into an 8x8 pan with parchment or greased. Bake until mixture is set and edges are lightly browned, 12 minutes.  Now drop the temperature to 300°F for another 10 minutes.

  5. 3. Top with sea salt. Chill (place in freezer for it to set more if need be.)
