It's made with farro, butternut squash, parmesan cheese, pistachios and mint — it's nutritious, flavorful, and does not lack in flavor. 😍

Eat Well. 



Farro 1 cup
Butternut Squash - 1" Dice 1/2 cup
Parmesan Cheese 1/4 cup
Pistachios  2 tbsp
Fresh Mint 1 sprig
Olive Oil 2 tbsp
Lemon Juice 1 tbsp
Cinnamon 1/4 tsp
Granulated Garlic  1/2 tsp
Kosher Salt 1 tsp
Black Pepper 1/4 tsp



1. Cook farro according to packing instructions (make about 1 cup). Once it's done cooking, let chill and toss with lemon juice and 1 tbsp of olive oil.

2. Preheat oven to 425°F. Toss butternut squash with 1 tbsp olive oil, cinnamon, garlic, kosher salt, and black pepper. Roast on a sheet tray until browned, about 20 minutes.

3. Layer farro, butternut squash, pistachios, mint, and parmesan. Enjoy!
