These Oatmeal Raisin Cookie Energy Bites are the healthy version of the cookie you've been seeking out. They take only 10 minutes to make, can be done all in one bowl, and they'll make enough to have for the next week. Oatmeal Raisin Cookie Energy Bites

Ingredients  
GF Rolled Oats 1 cup
Shredded Coconut 1 cup
Maple Syrup 1/4 cup
Almond Butter 1/2 cup
Hemp Seeds 1 tbsp
Vegan Vanilla Protein Powder 1 tbsp
Cinnamon - Ground 3/4 tsp
Kosher Salt 1/4 tsp
Vanilla Extract 1/2 tbsp
Dark Raisins 1/4 cup
 
Directions
 1. In a large bowl mix together oats and shredded coconut.
 
2. Add almond butter, maple syrup, hemp seeds, vegan vanilla protein powder, cinnamon, salt, vanilla extract and raisins to the bowl. Mix until mixture is sticky and comes together.
 
3. Scoop into balls using a small scoop. Roll into a ball shape.

4. Refrigerate and enjoy!
