One-Pot Gnocchi Soup

Gnocchi (shelf-stable)

Olive Oil
2 tbsp
Yellow Onion
1 each
Garlic
1 tbsp
Italian Seasoning
1 tsp
Diced Tomatoes - Canned

Chicken Broth

Baby Spinach

Directions
1. Heat oil in a large stock pot. Add sausage, onion, garlic, and Italian seasoning. Stir often to break up the meat using a spoon. Cook until meat is no longer pink, about 8 minutes.
2. Stir in tomatoes and broth, then bring to a boil. Add gnocchi and spinach; cook, stirring often, until gnocchi is al dente, about 2 minutes.
