With only a few simple ingredients and a little bit of your time, this recipe involves almost no cooking, so your time in the kitchen will be kept at a minimum. You can cook your own quinoa or buy it premade. Then, the rest is just preparing some vegetables. What makes this dish so addicting is its flavorful mix of corn, avocado, feta, fresh tomatoes, and herbs.

Quinoa | 1 cup |
Corn Kernels | 4 each |
Cherry Tomatoes - halved | 16 oz |
Olive Oil | 1 tbsp |
Lemon Juice | 2 tbsp |
Garlic - minced | 1 clove |
Kosher Salt | 1/2 tsp |
Parsley | 1 tbsp |
Shallots - minced | 1 each |
Lime Juice + Zest | 1 each |
Cilantro - chopped | 1/2 cup |
Avocado - diced | 1 each |
Feta - crumbled | 1/2 cup |
1. Cook quinoa according to instructions. Let cool and set aside.
2. Toss tomatoes, garlic, olive oil, vinegar, herbs, and salt together in a small bowl. Set aside.
3. Toss cooled quinoa with marinated tomatoes, corn, shallots, herbs, lime juice, and zest.
4. Fold in feta and avocado. Then add extra salt and oil to taste. Enjoy!
