For Peanut Dipping Sauce
Creamy Peanut Butter
1 1/2 tbsp
Orange Juice
1 tbsp
Tamari Sauce
2 tsp
Lime Juice
2 tsp
Honey
1 tbsp
Sesame Seed Oil

Fresh Ginger - Grated
1/4 tsp
Garlic - Minced
1/4 clove
Sriracha

Directions
1. To assemble rolls, place a sheet of rice paper in a medium bowl of warm water until just softened. Lift sheet carefully from water, then place it on a cutting board.
2. Place some of each of the vegetables horizontally in the center of the sheet and top with two mint leaves.
3. Fold edge closest to you up and over the filling; roll sheet to enclose filling, folding in sides after first complete turn of roll. Repeat with remaining sheets and filling.

For peanut sauce: Whisk peanut butter, soy sauce, vinegar, garlic, ginger, and boiling water until smooth. Top with scallions and serve alongside rolls.
