Oats, coconut, cherries, maple syrup, and cinnamon - these are all ingredients that make up our new vegan cookie.

It's our very own Vegan Housemade "Coconoat" Cherry Cookie. Think healthy breakfast, but in cookie form. What we love most about these cookies is is: (1) you would never know they were dairy-free; (2) they have fantastic texture in each bite; (3) It's a healthier option for when you want something lighter.

Double the recipe and freeze the extra dough for a time you're craving these again! Full recipe below.

Coconoat Cherry Cookie


SERVES  8 SERVINGS

COOK TIME  10 MINS

 

Ingredients
GF Rolled Oats 1 1/3 cup
All-Purpose Flour 1 cup
Shredded Coconut 1 cup
Kosher Salt 1/3 tsp
Cinnamon - Ground 1 tsp
Baking Soda 1 tsp
Light Brown Sugar 1 1/2 cup
Unsalted Butter 4 oz
Maple Syrup 3 tbsp
Vanilla Extract 1 tsp
Oat Milk 1 1/4 tbsp
Dried Cherries 3/4 cup
 
Directions
1.Cream the butter and brown sugar, then add maple syrup and vanilla.
2. Fold in dry ingredients.
3. Add oat milk. The dough should stay in shape when pressed into a ball.
4. Portion using green scoop and press each cookie to flatten the tops (flatten them to about half the size of the balls). Chill for 2 hours.
5. Bake at 350°F for 10 minutes until tops are lightly browned. Enjoy!
