All you need is a few ingredients, one sheet tray, and 30 minutes of your time. Serve it with rice and your favorite vegetable for a complete meal. Want it less spicy? Omit the red pepper flakes and you're all set.

Baked Pineapple Salmon

Directions
1. Preheat oven to 350°. Line a large rimmed baking sheet with parchement paper or foil with cooking spray.
2.In the center of the foil, lay pineapple slices in an even layer. Season both sides of the salmon with salt and pepper and place on top of pineapple slices. Whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes in a small bowl. Brush all over the salmon fillet.
3. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden. Garnish with sesame seeds and scallions. Enjoy!
