Here's an easy and filling breakfast that makes enough to serve the whole family. They're easily customizable, flavorful, and a nice switch up to a usual breakfast (no one will even know it was THAT easy)!

Corn Tortillas | 6 each |
Pepperjack Cheese | 1 cup |
Black Beans or Refried Beans | 15 oz |
Olive Oil | 1 tbsp |
Eggs | 6 each |
Guacamole | 8 oz |
Pickled Red Onion | 8 oz |
Jalapeño - Sliced | 2 each |
Cilantro - Chopped | 4 tbsp |
Pepper | 1/4 tsp |
Salt | 1/2 tsp |
Directions
1. Bake your tostada shells with shredded cheese for 10-15 minutes at 375°F
2. Meanwhile, fry your eggs and season with salt and pepper.
3. Top the heated shells with your refried beans, fried eggs, guacamole, pickled red onion, jalapeños, and cilantro.
4. Serve while still hot and enjoy!
