Creamy Spinach Orzo

We find one-pot pasta recipes to be the perfect meal for when you want a dinner with a big flavor and made in little time.

Creamy Spinach Orzo
Orzo 1 cup
Olive Oil 1 tbsp
Butter 2 tbsp
Onion 1/2 each
Garlic 4 each
Italian Seasoning 1/2 tsp
Sun-Dried Tomatoes 1/4 cup
Lemon Juice 1 tbsp
Dijon Mustard 1 tsp
Vegetable Broth 2 cups
Heavy Cream 1 cups
Parmesan Cheese 1/2 cup
Baby Spinach 2 cups
Fresh Basil 1/4 cup
Salt & Pepper to taste

 

Directions
 
1. Add the oil, butter, and onion to a pot over medium-high heat. Sauté the onion for 3-4 minutes.

2. Add the garlic, Italian seasoning, sun-dried tomatoes, lemon juice, Dijon mustard, and orzo. Cook for 2-3 minutes.

3. Add the vegetable broth and cream. Once it starts to bubble, continue cooking for 10 minutes, stirring often.

4. Take the pot off the heat, and stir in the parmesan, spinach, and basil. Cover the pot for a few minutes until it has thickened up to your liking. Season with salt & pepper as needed.
