Rainbow Fruit Kabobs w/ Pot O’ Gold Yogurt Dip
For the Fruit Kabobs
Raspberries
1 cup
Mandarin Oranges, peeled & segmented
2 each
Pineapple, 1/2" dice
2 cups
Kiwis, 1/2" dice
2 each
Blueberries
1 cup
Red Grapes
1 cup
Bamboo Kabob Skewers
10-12 sticks
For the Yogurt Dip
Greek Yogurt
1 cup
Honey
2-3 tbsp
Edible Glitter
a pinch
Directions
1. Skewer the fruit onto the kabobs in the following order: grape, blueberry, kiwi, pineapple, orange, and raspberry. Assemble the rest of the kabobs and place them on a serving platter.
2. To make the dip, combine the Greek yogurt and honey in a small serving bowl. Sprinkle the edible glitter on top and serve with the fruit kabobs.
