Strawberry Cheesecake Overnight Oats

Craving cheesecake, but want something healthier? Try this seasonal strawberry cheesecake overnight oats recipe. Set yourself up for the next day by preparing a batch the night before. We used strawberries and lemon zest, but any type of berry will do. Let us know if you try out the full recipe below.👇

Strawberry Cheesecake Overnight Oats
Rolled Oats 1/2 cup
Chia Seeds 2 tbsp
Frozen Strawberries 1 cup
Almond Milk 3/4 cup
Vanilla Greek Yogurt 1/4 cup
Cinnamon 1 tsp
Lemon Zest 1 tsp

 

Directions
1. To make strawberry compote, heat the frozen strawberries in a saucepan for about 15 minutes. Add 1 tbsp of the chia seeds and mash the mixture down with a spoon or fork. Set aside.
 
2. Mix rolled oats, remaining tbsp of chia seeds, almond milk, and cinnamon. Give it a stir and leave in the fridge overnight.
 
3. In the morning add your layer greek yogurt, strawberries, and lemon zest on top. Serve and enjoy!
