Udon Noodles are chewy, thick noodles made from wheat flour and is traditionally used in Japanese cuisine. We serve our udon noodles with fresh cut raw vegetables and a house-made peanut sauce. Our peanut sauce is made with peanut butter, tamari, honey, ginger, and sesame oil - creating a fantastic, flavorful experience.

For Udon Noodles: |

Udon Noodles - Cooked | 1 lb |
Red Cabbage - Shredded | 1/4 cup |
Carrots - Shredded | 1/3 cup |
Red Bell Pepper - 1/4" Julienne | 1 cup |
Edamame - Shelled | 1/2 cup |
Scallions - Thinly Sliced | 1/2 cup (save half for garnish) |
Sesame Seeds | 1/2 tbsp |
Peanuts - Roasted, Salted, Chopped | 1/8 cup (for garnish) |
For Peanut Sauce: |

Creamy Peanut Butter | 1.5 tbsp |
Orange Juice | 1 tbsp |
Tamari Sauce | 2 tsp |
Lime Juice | 2 tsp |
Honey | 1 tbsp |
Sesame Seed Oil | 2 tsp |
Fresh Ginger - Grated | 1/4 tsp |
Garlic - Minced | 1/4 clove |
Sriracha | 1/4 tsp |
Kosher Salt | 1/8 tsp |
1. Combine all ingredients in a mixing bowl. Blend using an immersion blender or whisk until smooth. Set aside.
2. Cook udon noodles according to instructions. While this is cooking, start prepping the rest of the ingredients that go in the udon noodles.
3. Mix everything together except scallions and chopped peanuts. Top with peanuts and scallion at the end for garnish. Enjoy!
