What to Make with Overripe Fruits

Banana Bread
Bananas 3 each
Unsalted Butter 1/3 cup
Baking Soda 1/2 tsp
Salt 1 pinch
Sugar 3/4 cup
Eggs 1 each
Vanilla Extract 1 tsp
All-Purpose Flour 1 1/2 cups
 
Directions
1. Preheat the oven to 350°F, and butter a 4 x 8-inch loaf pan.
 
2. In a mixing bowl, mash 2 ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
 
3. Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
 
4. Pour the batter into your prepared loaf pan. Top with one a banana sliced in half length-wise, cut side up (optional). Bake for 50 minutes, or until a toothpick or wooden skewer inserted into the center comes out clean. If the outside of the loaf is browned but the center is still wet, loosely tent the loaf with foil and continue baking until the loaf is fully baked.
 
5. Let cool and enjoy!

Pineapple Salsa
Pineapple - Small Dice 1 each
Red Onion - Small Dice 1/4 each
Bell Pepper - Small Dice 1 each
Cilantro - Chopped 1 tbsp
Kosher Salt 1/2 tsp
Lime Juice 1/2 tsp
Cilantro (optional) 1 tsp

Directions
  1. 1. In a medium serving bowl, combine the pineapple, bell pepper, onion, cilantro, and jalapeño. Add the lime juice and salt, and stir to combine.

  2. 2. Season to taste with additional lime juice and salt. Serve with your favorite tortilla chips!

Raspberry Jam
Raspberries 4 cups
Sugar 2 cups
Lemon Juice 1 tbsp
 
Directions
  1. 1. In a medium saucepan over medium heat, combine raspberries, sugar, and lemon juice.
  2.  
  3. 2. Cook, stirring frequently until the mixture is boiling. Reduce heat to medium-low and simmer, stirring frequently. Cook until the mixture has thickened and leaves a trail behind your spoon when you stir. This should take somewhere between 12 and 15 minutes.

  5. 3. When the jam has thickened, remove from heat and transfer to a clean glass jar. Let cool completely before covering and refrigerating.
